Alpha Omega and Bambino’s Baby Food Join Forces in Waco, Texas

Empowering Families with Fresh Mediterranean Cuisine—From Babies to All Ages

WACO, TX — In a powerful collaboration grounded in tradition, wellness, and community, two women-led and mother-founded businesses—Alpha Omega Mediterranean Grill & Bakery and Bambino’s Baby Food—are proud to announce the Grand Opening of their joint location at 1501 Hewitt Dr., Suite #1 in Waco, Texas, on Monday, April 28, 2025.

This vibrant new culinary hub brings the heart of the Mediterranean to Central Texas—nourishing families with fresh-made foods designed to support health at every stage of life, while offering a warm and inviting space for both dining and takeout.

A Community-Rooted Collaboration

This location marks the second store for Alpha Omega, expanding into Hewitt—a growing, family-focused community. It is also the Texas debut of Bambino’s Baby Food, featured within Alpha Omega’s newest store to create a store-within-a-store experience—a one-stop destination where children and adults alike can enjoy real food made with purpose.

At the heart of this partnership are two mothers, long-time friends, entrepreneurs, and community advocates.
Dorothy Galanis Lentis is the founder of Alpha Omega in downtown Waco and the acclaimed 1424 Bistro.
Zoi Maroudas, a Baylor University alumna, medical professional, and Mediterranean diet researcher, founded Bambino’s Baby Food after years of studying how early nutrition impacts long-term health.

Zoi and her husband, Andreas Tziolas—a fellow Baylor graduate, scientist, and devoted father—moved to Alaska to bring Bambino’s to life. With his support, Zoi built Bambino’s from the ground up to deliver the purest, most nourishing baby food possible. The company is rooted in family, science, and a mission to raise a healthier generation.

“It all started right here,” said Zoi Maroudas. “I discovered my passion for science-based nutrition in Waco, and bringing Bambino’s here is more than business—it’s coming home.”

About Alpha Omega

Known for its welcoming atmosphere, vibrant flavors, and wholesome ingredients, Alpha Omega Mediterranean Grill & Bakery has become a beloved local gathering place, rooted in tradition and family.
The restaurant was founded by Dorothy Galanis Lentis and her husband, Filippos Lentis. Together, they’ve built Alpha Omega into a place where families gather, dine, and feel at home.

Their menu reflects their Greek heritage—offering hearty, protein-rich platters, hand-made pitas, rotisserie meats, vegetarian dishes, vibrant salads, and Mediterranean pastries—all prepared with love, tradition, and quality.

“Food is a celebration of culture, family, and health,” said Dorothy Galanis Lentis, founder of Alpha Omega.
“This collaboration is rooted in love—for our heritage, for our children, and for the families we serve. As mothers, it’s especially meaningful to welcome everyone to a place where you can feed your baby, share a meal with your loved ones, and walk away with a complete dining and family experience.”

About Bambino’s Baby Food

Bambino’s Baby Food, founded in 2012, is proudly 100% women-owned and manufactures every product in its own dedicated facility in Alaska. Founded by Zoi Maroudas, a medical professional and Mediterranean nutrition researcher, Bambino’s delivers fresh science-driven, Mediterranean-inspired meals made from pure vegetables and premium proteins—all gluten-free, soy-free, corn-free, and preservative-free.

Designed in frozen, star-shaped servings, Bambino’s meals grow with children through stages 1, 2, and 3—supporting brain, immune, and digestive development with ease and convenience.

“The first foods our children eat lay the foundation for their lifelong health,” said Zoi Maroudas, founder and CEO of Bambino’s.
“In the first three years of life, their bodies and brains grow at an extraordinary rate, making nutrition critically important. These early bites not only support development—they also shape a child’s palate and relationship with food for years to come.”

Zoi first envisioned Bambino’s while working with elders at Hillcrest Hospital in Waco—many of whom required baby food due to swallowing or digestive challenges but lacked access to fresh, protein-rich meals. That moment inspired Bambino’s: a product line of organic, protein- and vegetable-based meals that are flavorful, naturally high in calories, and deliver 7 to 10 times more nutrition per gram than typical baby food.

Signature Flavors

  • Sockeye Salmon Bisque – wild Alaskan salmon with vegetables
  • Filet Mignon with Vegetables – iron-rich and protein-dense
  • Vegetable Stew – comforting, flavorful, plant-based

All ingredients are grown and produced in Alaska and are completely free of pesticides and herbicides. Bambino’s distributes through Kroger, Albertsons, and nationwide home delivery, with options for monthly supply bundles and subscriptions.

“Zoi is an innovator and an advocate for change,” said Andreas Tziolas. “She recognized the underlying causes behind the rise in food allergies, childhood obesity, and other health risks—and created a solution. She built a company grounded in real nutrition and developmental needs, and she’s become a strong national voice for food policy reform. From the White House to Capitol Hill to national health conferences, Zoi is leading conversations around WIC reform, food-as-medicine, and a healthier future for all children.”

As Bambino’s launches in Texas, I couldn’t be more proud of both Dorothy and Zoi—two women, one shared mission: to raise the standard for children’s health and nurture a healthier generation.

As Bambino’s makes its Texas debut, Zoi looks forward to reconnecting with families, retailers like H-E-B and Whole Foods, and expanding across the Lone Star State with a mission to nourish the next generation from the very first bite.
